Simply Delicious New Yummy Recipe

I'm trying a new recipe to night, one that I made up myself. Like everyone else, time is often short; I wanted this to be something that I could easily put in the slowcooker before leaving for work. So I went through my pantry, looking for yummy things to put together in the hopes of creating a delicious dinner for tonight. This is what I came up with:

Super Easy Taco Soup (serves 8)

  • 1 pound ground beef, lean; cooked and drained
  • 1-15 oz can black beans; undrained
  • 1-15 oz can chili beans in chili sauce; undrained
  • 1-15 oz can corn; undrained
  • 1-28 oz can crushed tomatoes
  • 1 package taco seasoning mix
Mix ingredients together; put in slowcooker and cook on low for 6-8 hours. Enjoy with sour cream, shredded cheese and tortilla chips.

It's so YUMMY! We like our dishes with a bit of zing, so I used chili beans in a hot sauce and also a hot taco seasoning mix. You could also use Mexican corn with green chilies.

Not only does it taste real good, but it is also good for you! It is low fat with only 5.4g of fat, 255 calories and a whopping 8g of fiber. There is plenty of protein too, 20.37 grams. To make it healthier, use ground chicken, turkey or venison...and don't forget to serve it with fat-free sour cream and baked tortilla chips :)
