This brine is similar to traditional bread and butter, but the end result is different. These pickles taste fresh!
4 C cucumbers, thinly sliced
1 large onion, thinly sliced
1 ½ tsp pickling salt
1 ¼ C white vinegar
½ C sugar
1 tsp turmeric
¼ tsp celery seeds
¼ tsp black pepper
Combine the cucumbers, onion and pickling salt. Let stand for at least 2 hours. Drain, but do not rinse.
Combine the vinegar, sugar, turmeric, celery seeds and black pepper. Pour over the cucumbers; the brine will not completely cover the cucumbers. Pack into freezer containers, leaving about 1-inch head space. Freeze.
Thaw in refrigerator for at least 8 hours before serving.
