Celery and Blue Cheese Dip

Perfect for a quick snack or as a delicious appetizer for parties!

8  celery stalks, with leaves; wash & pat dry

1-16oz  cottage cheese; non-fat

1-3oz  Blue cheese; crumbled

¼ tsp  black pepper

 

Remove leaves from celery stalks and set aside.  Refrigerate until ready to eat.  Place leaves in a food processor.  Add cottage cheese, blue cheese and pepper; process 1 minute or until smooth, scraping sides of bowl once if needed.  Cover and refrigerate until ready to eat.

 
Cut each celery stalk into 9 slender sticks and serve with blue cheese dip.  To serve as an appetizer, divide blue cheese dip into 8 clear tall glasses.  Place 9 celery sticks into each glass and serve.

Serves 8  (Helpful tip:  if you don’t have a food processor, try using a blender or even a hand-mixer to make the blue cheese dip.)
